Baird says, “The beta-carotene in squash is essential for the functioning of white blood cells and fighting pathogens. It also plays a major role in reducing inflammation and boosting the immune system.”
And she adds, as it is known, beta-carotene in the body turns into vitamin A, which is important and necessary for eye health, as it helps in case of dry eyes and protects the cornea.
And the expert notes, that pumpkin is rich in potassium, as a cup of it contains 582 milligrams of it. This element, in combination with carotenoids – beta-carotene, lutein and zeaxanthin, helps relax the walls of blood vessels, which leads to the return of blood pressure to its normal level.
And given that squash is high in calcium and manganese, she adds, it helps in strengthening the bones. The amount of dietary fiber in it (7 grams per cup) helps improve the digestion process, and she says, “Pumpkin is absorbed slowly, so there is no sudden rise in blood sugar level, and this is very important to prevent diabetes and cardiovascular disease.”
