It is recommended to use whole grains such as wild rice to control blood sugar because they break down more slowly.
In fact, wild rice ranks high on the glycemic index (GI), which is a measure of how quickly a food rises in blood sugar.
The nutritional data showed that the glycemic index for wild rice is 57, which is similar to that of oats and brown rice.
Research also indicates that diets rich in whole grains such as wild rice may reduce the risk of developing type 2 diabetes by 20-30%.
This is mainly due to the vitamins, minerals, plant compounds and fiber found in whole grains.
In a review of 16 studies, whole grains were associated with a reduced risk of developing type 2 diabetes, while refined grains such as white rice were associated with an increased risk.
The researchers suggest that eating at least two servings of whole grains per day may reduce the risk of developing this condition.
