Guadalajara, Jal. To protect the authenticity of the first Mexican Denomination of Origin, the Tequila Regulatory Council (CRT) reinforces the surveillance of the entire production chain ─from the origin of the raw material and throughout the entire beverage production process─ through the Banco Isotopico del Tequila.
To date, the authenticity of the tequila It is established through a permanent inspection carried out by the CRT in the producing companies, verifying 100% of the product elaboration process.
However, the regulatory body decided to complement this inspection with scientific methods, so the isotopy laboratory is working on the development of the isotopic footprint of the tequila.
This fingerprint contains information such as the origin and age of the agave, the type of process used in the extraction, fermentation, distillation and maturation of the drink.
“It is possible to complement the inspection process with the analysis of the isotopic ratios of Carbon 13 and Oxygen 18”, pointed out the head of the laboratory, Rocío Fonseca.
The laboratory that was inaugurated in 2016 and which has the endorsement of the Secretariat of Agriculture and Rural Development (Sader), “Aims to be an analytical tool complementary to the activities of certification and on-site inspection; He is currently working on the construction of the isotopic footprint of the tequila“, Commented Fonseca Aguiñaga.
With this isotopic database, it is sought to scientifically support the authenticity of the tequila made by manufacturers in Mexico and at the same time, have information that allows detecting cases of falsification or adulteration.
With the isotopic footprint of the tequila “It can be defended by means of the history generated and stored in the CRT, the products of each company, protecting them from unfair competition,” said the head of the laboratory.
Genuine market
So far, they analyzed 1,230 samples from 127 different tequila companies, and the goal is to perform analysis on all of them, in order to guarantee a genuine market.
This type of analysis is used to guarantee the authenticity of other beverages such as Scotch, the champagne and wines with a designation of origin.
